The Humble Brownie

The Brownie; part cake, part cookie and totally delicious! We're partial to cakes, cookies, and as a result also brownies! As mentioned on our facebook page (, this attempt to bake brownies was a misguided attempt to figure out the meaning of an acronym (WABT...What About Tues? Wake and Bake Tues?), which led to one of us yearning for brownies. What followed was trial and mostly error. We like eating, not too great on the baking, but are working on the latter though :) The snap posted is our end product in all its unfiltered glory, which was realised after following the recipe below!


  • Unsalted butter: 100 g
  • Dark Chocolate: 200 g
  • Eggs: 4
  • Golden Caster Sugar: 250g
  • Plain Flour: 100g
  • Baking Powder: 1tsp
  • Cocoa: 30g


  1. Preheat the oven to 180C
  2. Line your brownie tin/baking tray with baking parchment. Melt the butter and the cocoa together in a microwave or in a bowl set over a pan of simmering water. Cool to room temperature.
  3. Whisk the eggs and sugar together until the mixture is light and fluffy
  4. Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa.
  5. Fold this in to create a fudge like batter.
  6. Bake for about 30 minutes or until the top is cracked. Remember to check that the middle is completely set. Cool completely, then lift out of the brownie tin and cut into pieces.

P.S. We also attempted to use bananas and then apple sauce as an alternative for eggs, as apparently that is a thing! Don't believe us? Ask google :) The "brownies" that resulted from this experiment will forever be our secret, no photos were taken ;) However, if you have ever tried using these are part of your recipe please don't hesitate to mention in the comments or as part of your recipe!
